Cinnamon Apple Oatmeal

Say hello to my newest favorite breakfast!

Cinnamon Apple Oatmeal.
It's based on this Apple 'N' Oat Cobbler recipe by Joy Bauer
 
I made a few modifications, and came up with this similar recipe.
 
1/2 cup quick 5 minute oatmeal
1 cup skim milk
1 Apple, cut into little pieces
1/2 Teaspoon Splenda Brown Sugar Blend
1 Teaspoon Cinnamon Sugar
Dash Cinnamon
 
Combine oats and milk in microwavable dish.
I like to use a Pampered Chef 1 quart microwave pan.
Make sure the dish is loosely covered.
I covered mine tightly once.
Just once.
I ended up with half cooked oatmeal all over my microwave.
Live and learn, I guess.
Microwave for 1 minute, 40 seconds.
 
While that is cooking, it's a great time to chop your apple.
I leave the skin on because
1. I like it
2. It's supposed to be good for you
But mostly because I like it.
 
Remove the oatmeal from the microwave.
Carefully uncover the dish.
Steam burns are no fun.
 
Add the Splenda and stir.
It will be pretty runny at this point.
 
Add most of the apple.
Stir some more.
Reserve about 1/4 of the apple for the top.
 
Put the dish back into the microwave.
Again, cover the dish loosely.
Cook for a minute.
Since microwaves vary, you may need to tweak the time.
Remove from microwave.
Carefully uncover.
 
Stir gently.
Toss the rest of the apple on top.
Sprinkle with the cinnamon sugar,
And the cinnamon.
 
Wait for it to cool a bit.
Enjoy!

But I eat mine straight from the pan.

  1. I'm so hungry this morning and this looks wonderful! I shall rush out and buy a few apples forthwith! Think I'll sweeten mine with stevia. I was glad to see it was a microwave recipe. Thanks!

  2. Stevia is a great idea for a sweetener! I have branched out to including berries now and then, and they are delicious too!
